The technical process of cooking dishes forms part of the advanced cooking techniques explained step by step by a Chef Trainer who doesn't limit himself to just only explaining the recipes but also passes on his knowledge to show how to run a successful and efficient working kitchen.

Cutting, filleting and the cleaning of food are the underlying techniques in this educational path. The objective is to recreate a real team of chefs at work highlighting the priorities in relation to teamwork.

The good management of a production line, the importance given to the cleanliness of the workstation, the ability of preparing and cutting, service and mise en place are the essential elements that students will acquire and combine in order to be able to gain access to the kitchens of the top restaurants.
