The live training takes place in the kitchens of some of the best New York Restaurants, with the help of the Academy’s Educational Office. An initial test interview allows the coordinator to assess the motivational needs of each individual student and will also help with the student's integration within the various Restaurant Partners of the Academy.
The attendance schedule of the live training is flexible and can be organised to meet and maximize the level of commitment of the student. However, the restaurant's lunch and dinner shifts and closing times have to be considered. The approximate working times are: 10.00-15.00 for the lunch shift and 17:00 to the end of the dinner shift. Once the course starts, the Executive Chef of the restaurant will become the student’s mentor guiding them along an evolutionary teaching path. Students will start by learning the basic skills of food preparation and progress to the final stages of more sophisticated dishes.
